Production area: Mazara del Vallo (TP), northwestern Sicily (Italy)

Soil type:  medium texture soil rich of limestone and good mineral endowment

Altitude: 200/250 meters a.s.l.

Viticulture: vertical trellis system with a medium-high plant density (5000 plants/ha)

Climate: insular-mediterranean with mild winters and breezy summers

Harvest period: at the end of September we harvest the grapes for the vinification of the base wine and until mid-October we harvest the grapes for drying

Vinification: soft pressing of the grapes for the base wine, followed by cold static decantation; fermentation at controlled temperature (18/20 ° C) in small stainless steel tanks. Subsequent dried grapes infusion in small stainless steel tanks

Ageing: 7/8 months on fine dregs through batonnage, then in bottles for at least 12 months to ensure the perfect evolution of its bouquet

TASTING NOTES

  • Visual: bright golden yellow
  • Olfactory: complex, intense and persistent with notes of Sicilian citrus fruits and honeyed nuances
  • Taste: soft, elegant and seductive with a notable nuance of dried figs and candied fruit

Pairing: perfect with the best traditional desserts, especially the dry ones, possibly with some fruit
